Austenitic Stainless Steel and Martensitic Stainless Steel are two common types of stainless steel. They have some major differences in structure, performance and use:

Austenitic stainless steel: The organizational structure of austenitic stainless steel is mainly austenite, which is a face-centered cubic structure. Austenitic stainless steel has good toughness and plasticity at room temperature.
Martensitic stainless steel: The organizational structure of martensitic stainless steel is mainly martensite, which is a body-centered cubic structure. Martensitic stainless steel has higher hardness and strength, but is relatively brittle.
Corrosion resistance:

Austenitic stainless steel: Austenitic stainless steel has good corrosion resistance and has good resistance to a variety of corrosive media such as acids, alkalis, salts, etc.
Martensitic stainless steel: Martensitic stainless steel has relatively poor corrosion resistance, and is prone to corrosion especially in the presence of corrosive media such as chloride ions.
Hardness and Strength:

Austenitic stainless steel: Austenitic stainless steel is relatively soft and has good plasticity and toughness at room temperature, but relatively low hardness and strength.
Martensitic stainless steel: Martensitic stainless steel has high hardness and strength, but relatively low toughness. They can be heat treated (quenching and tempering) to increase their hardness and strength.
Application areas:

Austenitic stainless steel: Austenitic stainless steel is commonly used in the manufacture of chemical equipment, food processing equipment, medical devices and other applications that require corrosion resistance and good processability.
Martensitic Stainless Steel: Martensitic stainless steel is commonly used in the manufacture of knives, blades, bearings, hydraulic parts and other applications that require high hardness and strength.
